Simple Truth Quinoa Taboule

I love these two words together, and this salad!

  • ½ cup green onions, chopped
  • 1 cup Italian flat leaf parsley, chopped
  • ½ cup fresh lemon juice
  • 2 cups Simple Truth organic quinoa, cooked and cooled
  • ½ teaspoon white pepper
  • 2 tablespoons fresh basil, minced
  • 2 tablespoons fresh mint, chopped
  • ½ teaspoon salt
  • ¼ cup Simple Truth organic olive oil
  • 1 clove garlic, minced
  1. Prepare quinoa as directed on package; cool.
  2. Toss together all ingredients. Chill for 1 hour or more to allow flavors to blend.
